What's funny is...Hi Margaret! It's Kate :)<br /><br />What's funny is that I was talking to my mom's friend who is a nutritionist and she was saying that coconut milk is better for you! So I went and bought some of that! I've also read about coconut oil and have ALWAYS wanted to try it :)<br /><br />But to make my cooking healthier I usually add more veggies than a recipe may call for, use brown rice instead of white rice, wheat pasta instead of regular. But the thing is, I'm a sucker for butter (and think the fake stuff is worse for you) so I don't usually substitute that if it calls for it :) Although I might use olive oil. But I HAVE been looking for a substitute.
